How It Starts

Our journey begins with our dedicated growers. We collaborate with 15 expert grape producers who supply us with the essential component for winemaking: high-quality grapes. Their expertise and commitment are fundamental to our process, ensuring that we start with the finest raw materials for our wines.

CRUSHING & PRESSING

The terms "crushing" and "pressing" in winemaking are often used interchangeably. The process of crushing and pressing involves not just extracting juice, but also retaining the pulp, skin, and fibers that constitute a grape. Crushing is the initial step before fermentation, where the grapes are crushed to release free-flow juice, turning the mixture into what is known as wine must. After fermenting the must for approximately 5 to 7 days, it's time to separate all the solids. This is the stage where wineries employ grape presses to press the wine must, extracting the liquid and leaving behind the solid components.

FERMENTATION & BLENDING

In the fermentation process, yeasts play a crucial role by converting the sugars present in the juice into ethanol and carbon dioxide.

 
 

STABILIZING & AGING

Stabilization is a critical step in winemaking to ensure that no further fermentation occurs.

The term 'aging' is frequently mentioned in winemaking and its relevance varies depending on the specific wine in question. Certain wines are immediately ready for consumption and do not require further aging, as they already possess soft tannins.

Blending is an artistic process where various varietal wines are skillfully combined to create one superior wine.

FILTRATION & BOTTLING

Fining and filtration are processes used to refine and finalize the wine just before it is bottled.

The last phase in the winemaking process is bottling and at Gibson, we employ a diverse range of bottles and bags for packaging our wines.
